Crock Pot Chicken and Black Bean Tacos

Over the weekend at our Coach Leadership Retreat, we had all the coaches make their favorite meals! One of my favorite dinners was this! I need easy meals that I do not have to prep a lot for so I am not wasting my entire day cooking! I love crock pot recipes because you literally throw in the ingredients in and walk away! 
So here it is.. EASY, HEALTHY, YUMMY!!!

1 lb chicken breasts 
1 12 oz can of black Beans
1/2 cup fresh salsa 
1 packet taco seasoning
1/3 cup water
1/3 cup cream cheese

Add all ingredients except cream cheese in crock pot and cook on low 6 hrs or high 4 hrs. Shred chicken in crock pot with 2 forks, pulling the chicken apart.
Add cream cheese in 20 min before serving and stir until melted.

I serve mine with greek yogurt, shredded cheese, lettuce/spinach, and anything additional you would like to add! I also use whole wheat shells, but whatever your preference is will work!

Fruity Oatmeal Bake
Over the weekend, I was at our coach retreat, we had lots of  great meals! Of course health and fitness coaches have to focus on food!! I felt like I was eating the entire time, but it was all healthy! Lots of great ideas for recipes, so now I get to share with you!
Breakfast is my favorite time to eat, and also the most important!! My goal is to find the easiest, but healthiest and satisfying recipes to make everyone's life simple!

1 1/2 cups dry oats
1 1/2 almond, soy, or skim milk
1/2 cup slivered almonds
1/4 cup dry cranberries
1/8 cup chopped walnuts (finely chopped)
1 green granny smith apple unpeeled (chopped into cubes)
1/2 tbsp vanilla extract
1.5 tbsp pure maple syrup
clean cooking spray (I use pam)

Combine all ingredients in a medium size mixing bowl

Mix together and put in a 9 in round pan after spraying with cooking spray

                                           Bake in oven @ 400 degrees for 40 min uncovered

 Remove and let cool off for 5-10 min and enjoy!!

Dream Team Coach Weekend Retreat

This weekend, the Dream Team (yes, I am part of the #2 team in the Beach Body Company) and as a part of our training, we all got together for a weekend getaway!  We went to Deep Creek, MD and let me just say how amazing it was to finally meet so many of my fellow coaches that I talk to all the time, but had never met! It is such a blessing to be a part of this team and have the ability to have training and work as a team so we can be better leaders and share our knowledge with others so we can all be successful with our health, and business!
I became a Beach Body Coach so I can not only have that financial freedom and stay at home with my children, but also so I can teach others what tools were given to me to be a successful health and fitness coach, wife, and mother! This is not just about working for a company.. Yes, it does mean a lot.  But the most important part of what I do is sharing my passion with others to help motivate them and mentor others and continue being a role model for my family!
We arrived to Deep Creek on Friday and had the opportunity to relax and get to know one another, share different ideas from each other, and build even more of a great relationship with everyone!

We were the first to arrive and it was so beautiful with the lake behind us and leaves changing into beautiful colors! Fall is definitely here!!

I finally met my coach on my team Forever FIT for the first time! This girl is amazing and was one of my challengers who had an amazing transformation!!
Here are all the Dream Team Coaches that attended the retreat! Lots of great leaders and motivators! 

Although you will see we had lots of fun moments, we did get serious and have training  sessions..

We learned about different areas in our business that we can improve on to better ourselves as leaders and coaches!

We are driven, and passionate about what we do.. when its time to focus, we put on those thinking caps ;)

before our workout starts!! It is a little obsession I have because it helps me so much with my energy level to perform my workout to the max!!

This girl right here is my success partner and has been by my side from day 1!! This is was coaching is all about..

We started as a health and fitness coach together, and have been there together through every rank advancement together!

Rank advancing is just like getting a promotion in your job after being successful in what you are doing.

We continue to stick together and push each other to the max because we both know what we are capable of... SUCCESS!!

But right now, its time for an awesome workout!!
P90X3!! Yes, that is right!! It is not out yet, but we had a copy to test out!

It was pretty intense!! It's all about results!!

Ok this was at the end of our workout and just being silly.. Once you get P90X3, you will know exactly WHY we are doing this!!!! 

Nothing like a little cool down after a great workout!!

Alright, along with our workout, we decided to have even more fun and prepare you all for an awesome surprise!!

We do it all, even DOUBLE PLANKS!!

Nothing better than getting into some yummy food to enjoy after a great workout!

Some Kale salad, Cucumber Salad, and the amazing chicken and Black Bean Tacos!! They are sooo easy to make, and yet so satisfying!!

Here was my lunch for Saturday also.. Lots of great choices.. I made my Quinoa and hummus layered dip which I ate with Black Bean chips, more quinoa salad, Kale salad, and fresh fruit!

 It is so crazy how so many of us never met each other before this weekend, but we were together and it felt like we knew each other forever!!
Our leader of the Dream Team Melanie Mitro! Such an inspiration to us all and so many others! She is WHY we are all here today in the position we are! We are all so grateful to have her as our mentor!

A Day in My Shoes as a Mommy and Beach Body Coach!

I want to give you a little idea of how I spend my day.. This is not including working my job as a nurse, but as a Beach Body Coach and as a Mommy! This is my life and I enjoy every minute of it!! I love that I can be  my own boss in my business, and work at my own pace! I can be at home with my kids, and enjoy them growing up!

We actually woke up at 7am.. I swear my kids have an alarm in their head! I got them downstairs and we made breakfast!
I make a healthy breakfast that includes protein, good source of carbohydrates, and simple carbs to get your body revved up for the day!!

These Protein Berry Pancakes are made with egg whites and oatmeal, vanilla, and cinnamon! You cook it just like a pancake and top it off with fresh fruit and drizzle raw honey or agave nectar to give it a little extra flavor!
This is a great breakfast that even the kids love!

Ok we are sooo getting into the Halloween Spirit!! ARE YOU?!!?

After breakfast, I took the boys to day care, so I can work some with Beach Body.  I have a very busy month, running Challenge Groups, Apprenticeships, Cup Challenge, and working a lot with my coaches, along with keeping up with my business center and my hubby's! So kids went to play and learn while mommy does some work at home! I was able to focus and get lots done!!

Got in my workout Turbo Fire (one of my all-time FAVORITE workouts), and burned some calories!
Of course, to get me going, I use my E&E to give me some extra energy!

After my workout, I got my second meal in... SHAKEOLOGY! My favorite meal and also the healthiest! I get all my nutrients I need that I do not normally get from my every day meals! Shakeology helps with my cravings, energy level, immune system, digestive system, and heart health! I am a huge chocolate fan, so what better way to help your cravings, than actually eating chocolate, but in a healthy way!?  Since, I drink Shakeology, I actually do not even need a mult-vitamin, because my 23 vitamins and minerals are in every shake!

One of my favorite Shakeology recipes is Vanilla Almond Fudge!!

1 scoop Chocolate Shakeology
12 oz ice
8 oz almond milk
1 tbsp Almond butter
1/2 tsp cinnamon
1/2 tsp vanilla extract

I was able to get some work done and of course before you know it, lunch is here! I feel like all I do is eat half of the time lol! But I am definitely keeping my metabolism going that is for sure!!
For lunch, I had a HUGE Greek Salad!! I add lots of feta, kalamata olives, and by the time I add those in, my calories are about ran up for that meal!! I also make a home made Greek Dressing that is in my Clean Eating Recipes tab! It is soooo absolutely easy to make and amazing in taste!!
Back to work I go.. I had phone calls with coaches and potential customers.. Read my personal development, which not only helps me and my business, but me as a person! My job is so much fun! I communicate with lots of people who want to be healthy and have the same hobbies I do! It a happy environment and love it!  I checked in with all 4 of my challenge groups and made sure they are all on top of things!! 
As I finish up with my work, time to pick up the boys and go to the pumpkin patch to enjoy QT with the family!! The boys loved picking pumpkins (although they wanted all of them lol) and set them out outside! On my way to the pumpkin patch, I ate my snack.. Raw peppers and hummus and a light string cheese!! Perfect for the car ride!!

I love that my Beach Body job gives my the ability to stop what I am doing, to take my kids places and spend time with them as I need! I have no one to answer to and I make my own hrs and work! I will not be that mother who is working so much, she misses out on opportunities with kids and holidays! Not anymore at least! As a nurse, I was working 12 hr days, every other holiday, lots of weekends, and missed out on lots.. I now am part time, and 1 holiday a year with my nursing job.. With Beach Body, I work when and where I want!
My kids come first and I am soooo glad that I can finally show it!!
Ok dinner time!!

 How about some Black Bean Burgers on 100% whole wheat buns and baked Parmesan Zucchini!! So it was my first time making the Black Bean Burgers and the taste was great! I honestly was not a fan of the texture though.. I think it was because I am used to biting into a burger that is thicker and harder to bite down on and chew, rather than soft beans that are already mashed..
I guess my black beans will stay in my chili and black bean, corn, and edamame salad!!

 After dinner, clean up, kids for a bath, and story time, and relax time!! It was a great and successful day, and ready to hit the sack for another great day tomorrow!!  Kids to bed at 9pm, and time to check in with my groups one more time before I hit the sack!!

As a mommy of 2, 2 1/2 jobs (also a school nurse relief), and a wife... I still make time for what is important to me.. My health! If I do not stay healthy, my husband and kids are most likely not going to make the healthy choices that I would.  My husband does not cook, so they would probably live off of cereal and mac n cheese!!
I have to be a role model and lead by example, how to live healthy, and successful, so they can grow up and do the same!
