Black Friday Sales Beach Body!

Happy Thanksgiving everyone!! I hope everyone enjoyed their day with family and friends and gave thanks to everything you were blessed with! I had an amazing day with my hubby and kids!
Our breakfast was awesome... I made my famous Pumpkin Protein Pancakes and the boys ate them all up!

I did not get my workout in this morning, but while the boys were napping, I was done prepping our turkey dinner, so I got my workout in and had my SHAKEOLOGY for my lunch!!

We of course watched the Macy's Day Parade, and cooked an awesome turkey dinner! I skipped on the mashed potatoes ( my hubby can't go without), and I made stuffing without butter, and used whole wheat bread and turned out really good!! For dessert I made an awesome PECAN PIE and did have some skinny wine with our friends!

I must say, this was the first Thanksgiving EVER that I did not have a second plate! I am very proud of myself!! ;)

Also, there is a 30 day money back guarantee.  So if for any reason you do not like Shakeology or it doesn’t work for you then return for a full refund!  But what do you have to lose?!?!

Week of Thanksgiving Meal Plan/Exercise Plan

Happy Sunday!! I soooo excited I am starting another Challenge Group tomorrow called Holiday Madness Fitness Challenge.  It is a 30 day clean eating/SHAKEOLOGY/fitness program where I coach you 1:1 and help you with fitness/nutrition tips, recipes, meal plans, and keep you accountable for reaching your health and fitness goals! I make a closed group on face book and this is where I add my challengers, so no one else but my challengers can see! We do before and after pictures and measurements which really help you track your progress! I have been running challenge groups every month for the past year, and cannot believe how many lives have changed!
I'm so excited to run this group especially because staying committed over the holidays are extremely tough, so I really want to challenge everyone! If you can stay committed over the holidays, this will prove that this is not a temporary diet... this is a lifestyle! So I am giving clean recipes to help so my challengers do not feel deprived over the holidays, but still are taking steps closer to their goals! No more gaining the extra 5 or 10 lbs over the holidays! My challengers are not included in that trend!
So just a sneak peak of what I do for my challenge groups is every Sunday, I make my meal plans for them and show them what my nutrition looks like, which got me to my goals.  I allow myself 1 off meal a week, which of course will be Thursday for Thanksgiving! I will have my Shakeology before my meal, so it helps me with not over eating! It is one meal that I also know I am getting the proper nutrition and multi vitamin!

I am so excited to be a part of this challenge with my challengers! They motivate me and give me the accountability to stay on track!
How we motivate each other is by me posting daily giving tips, recipes, etc.. and the challengers are required to report to the group at least 1 x daily to say whether they had their shakes, did their workout, and rate their food on a scale 1-5, 5 being the best and had no mistakes! 1 would be they completely fell of track!
At the end of the challenge, the challenger who stayed consistent with posts and who lost the most inches/lbs will get a prize! Yes, you here prize and your eyes light up right?!? :) Yes, I love prizes, and it motivates people!
Here is my newest recipe for the holidays!

Makes 12 Bites/Squares
Crust Ingredients:
  • 1 Cup Pecans
  • 1/2 Cup Pitted Dates
  • 1 Tsp Cinnamon
  • 1/4 Tbsp Vanilla Extract
Filling Ingredients:
  • 1 Cup Pitted Dates
  • 1 Cup Pecans
  • 1 Large Ripe Banana
  • 2 Tbsp Agave nectar
  • 1 Tsp Vanilla
  • 1 Tsp Cinnamon
  • 1/2 Tsp Nutmeg
  • Extra Pecans for Topping
  1. Using your small food processor bowl and blade blend all pie filling ingredients until smooth and set aside (except extra pecans).
  2. Using your large food processor process all crust ingredients until dough like consistency with visible chunks of nut.
  3. Grease an 8×8 baking pan or glass dish with a healthy oil.
  4. Press crust mixture evenly into baking dish.
  5. Top with pie filling using a spoon or spatula to make sure the filling is evenly distributed over the crust.
  6. Add extra pecans evenly over the top.
  7. Cover with saran wrap and freeze overnight.
  8. When you’re ready to serve remove from the freezer, cut into squares and serve immediately.
I am so excited to serve this with Thanksgiving dinner!! Remember, the first bite, taste good, but the second is always the best.. after that, you don't need anymore! Don't waste extra calories if not needed!! :)

I do want to give you a few good tips on staying healthy throughout the Thanksgiving holidays!
1. Pack extra- Yes, extra food! Have extra snacks with wherever you are going.  This is a good way to not make excuses, esp while traveling that you have no healthy food available!
2. WATER WATER WATER- Do you realize how many extra calories people intake from liquid alone? Lose the chemicals and unneeded calories (soda, juice, too much alcohol, tea, etc.).  Drinking lots of water will not only keep you hydrated, but fuller and reduce more cravings.  If you are going to have alcohol, use moderation just like food! FYI- you should intake your body weight divided by 2 in oz.. so Im 130.. divide that by 2 and get 65. I should have 65 oz every day in water.
3. Exercise- Just because its a holiday, does not mean you cannot exercise.  Getting your exercise in early in the morning will give you the rest of the day to enjoy yourself without feeling guilty!
4. Skip the appetizer! If you are eating a meal, is there really a need for an appetizer too??
5. STAY POSITIVE- If you stay positive, your more likely to be successful at the end of the day... If you think your going to fail, guess what?? You have already set yourself up and you will fail!
6. Keep in mind the reason we celebrate holidays- It is not to eat as much as we can, but its a great time to enjoy the company of our family and friends!
7. Keep yourself motivated- This may sound silly, but it works for me.. save a picture of your goal body in your phone.. Any time you want to over eat/drink, pull this picture up!
8. Do not eat 3 hours before bed- Your body is not burning as many calories so if you intake food and your going to bed, the carbohydrates/sugar sitting in your stomach is going to turn to fat.
9. Learn to say NO THANK YOU- Stop feeling bad to say no about food... If you are at a guests house and they want you to eat but its not healthy, if they care enough, they will understand you have goals and they should be happy for you to stay dedicated to them.  If they do not understand, they do not care about your goals. SIMPLE.
10. HAVE FUN!! Be happy to have the life you do.. Be thankful for what you have.. Celebrate what god has given you! :)

So I'm so excited to start another coach apprenticeship December 2nd! I run these trainings every month because so many people love health and fitness and would love to make a career out of their passion, but do not know where to start.  This is where I come in! As a 6 star Qualifying Elite Beach Body coach (top 1% of over 150,000 coaches in the company) and part of the #2 team, I have the training to help you get to the top! Part of me running the Apprenticeship is teaching you how to run a group, along with how to build a team of your own! Every day, you will have small assignments to help you feel comfortable as a coach and to start growing as a person, coach, and a leader!

I started as a challenger in my own journey that just wanted to help motivate others. I am a nurse with 2 small boys and wanted to find a job that gave me the opportunity to work from home. Coconut Crusted Sweet Potato Truffles- Clean version

Coconut Sweet PotatoTruffles

INGREDIENTS: (12 servings)
  • 2 large sweet potatoes, scrubbed
  • 1 oz finely shredded unsweetened coconut
  • 1/4 cup raw, unsalted pecans
  • 1/4 cup pure maple syrup
  • 1 tsp pure vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 6 tbsp coconut flour
  1. Preheat oven to 425°F. On a foil-lined rimmed baking sheet, add potatoes. Bake, turning once, for 50 minutes, until fork-tender. Remove from oven and let sit until cool enough to handle.
  2. Halve potatoes and scoop out flesh, discarding skins. Transfer flesh to a medium bowl and mash with a potato masher.
  3. In a food processor, process pecans into fine crumbs. Add 1 cup mashed potato flesh (reserve remaining potato for another use) and maple syrup. Process until smooth, stopping to scrape down sides of bowl. Add vanilla, cinnamon, nutmeg and process to combine. Gradually add flour and pulse to fully combine.
  4. Scoop out potato mixture in 1-tbsp increments and roll into balls. Transfer to coconut and roll to coat. Arrange on a parchment-lined baking sheet 
  5. Bake for additional 20 min or until coconut has nice light brown color on top!
  6. ENJOY!!

Nothing like pumpkin this time of year! Everyone is craving pumpkin, but instead of going to Starbucks and getting your pumpkin latte or treats with lots of calories that are not going to get you to your goal weight, try making this healthy version of pancakes!! Perfect for the family too!! 
Ingredients: (6 SERVINGS)
  • 1/2 cup pumpkin
  • 3 egg whites
  • 2-4 Tablespoons unsweetened almond milk (or milk of your choice!) *Start with 2 Tablespoons and add more if the batter is too thick.**
  • 1 Tablespoon  RAW honey
  • 1/2 cup oats
  • 1 scoop (~1/3 cup) vanilla protein powder ( I use SHAKEOLOGY)
  • 1 Tablespoon ground flax seed
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • Put all ingredients in a blender and blend well
  • Pour into heated skillet
  • Cook 1 min on each side
  • Drizzle with Pure maple syrup or raw honey!
  • ENJOY!

Coconut Chicken Strips

Coconut Chicken Strips

So I have been feeling like I need to make something with chicken that is a little different from the usual that I make... I kept thinking and coconut shrimp came to mind.. Yes, NOT chicken though lol .. Ok so since my hubby refuses to eat anything from the ocean, I decided to change it up a little with some coconut chicken! 
I just made it, so he has not tried it yet, but I did a taste test and I'm sure he will be pleasantly surprised with it! 
1lb boneless skinless chicken breast, sliced into strips
½ cup egg whites or egg substitute
¾ cup Whole Wheat Panko breadcrumbs
1/2 cup unsweetened flaked coconut
1 tsp sea salt
1 tsp ground pepper
1 tsp garlic powder

½ tsp crushed red pepper

Preheat oven to 400 degress F.
In one bowl, combine Whole wheat Panko, coconut, garlic powder, crushed red pepper, salt and pepper.
In another bowel, add the egg white or substitute.
Cut chicken breast into strips (easier to eat and cooks through better)!
Dip strips into egg and then into breading mixture. Layer the strips so they are not overlapping each other.

 Cook at 400 for 30 min or until crispy.

I also just made this new clean Honey Mustard that is pretty kick butt!! Great dipping sauce with the Coconut Chicken!!

4 tablespoons of  plain Greek yogurt
2 tablespoons of yellow mustard
1 tsp of apple cider vinegar
2 tablespoons of raw honey. 

Combine ingredients

Use as a dipping sauce with home made chicken strips!

Happy SUNDAY!! So I love Sundays because this is my day to write out my meals for the week and have them ready! Nothing like saving lots of time during the week by not cooking right!?! I seriously take 3 hrs on a Sunday to prep my meals, and literally save like 1 hr every day not cooking! So when you say you have no time, maybe start prepping meals and that will be a great start to give you extra time in your day!

So my food is all set, now I am ready to kick off an awesome week! I have 4 challenge groups going on right now and they are doing AMAZING!! This seriously may be the best experience ever with my groups! They are staying to dedicated and committed.. Taking accountability pictures of their workouts, food, and drinking their SHAKEOLOGY and water!! 
Even just with my one group that has been involved for 1 week, these are some of the comments:
"I have not used coffee/creamers/sugar"
"I have given up sweets which is huge for me"
"I have more energy"
"I never worked out this much before"
"I have less cravings"
"I am more regular in just 1 week"
I specifically run challenge groups because it is a support group for people who feel unmotivated reaching their goals alone.  They may need a boost with motivation, or keeping them accountable..or help with nutrition tips and recipes so they can enjoy the food they are eating! 
This is what my group is all about! We take day 1 , day 30, day 60, and day 90 pictures and measurements to track their progress to see an amazing transformation by the end of their challenge! 
Why I love doing these challenges is because I teach my challengers that this is not just a 30, 60, or 90 day challenge, this is the beginning of a lifestyle change to a healthier and happier person! I have seen the most amazing transformations and lifestyle changes by doing these groups and it is soooo honoring that I am the one who gets to witness this! 
I want to give an example of how my challengers make this a lifestyle change.. 
Sherri S. was one of my very first challengers when I really got involved as a coach with Beach Body.  She went through Insanity, and TURBO FIRE, and drank Shakeology every single day.  She has been committed every since.  This changed her life and she is now one of my coaches on my team! I am so thankful to have her because she motivates me! Sherri is what you call a life changer.  She just sent me this picture last week and just gave me another thanks for helping her.. I seriously get chills EVERY time I see yet another picture of her because they get better and better! She has stopped smoking, and has totally changed her eating and exercise habits! I also want to say if you ever need a cleaning lady, she burns over 900 calories in 3 hrs so Im sure she does a great job LOL!! 
I know it is not my normal Transformation TUESDAY, but when it comes to success.... sometimes you just cannot wait!! 
So CONGRATS to my friend and fellow coach SHERRI S. for being so dedicated and motivating throughout her entire JOURNEY! Im sure there will be more to come!!
