Cauliflower Pizza Crust (clean)

Cauliflower Pizza Crust

Ingredients:
  • 4 cups cooked, riced cauliflower (1 head of cauliflower)
  • 4 cups shredded mozzarella cheese (2 1/2 for crust, plus more for topping)
  • 1/2 cup whole wheat panko breadcrumbs
  • 1 egg, beaten
  • 2 tsp Italian seasoning (or dried oregano as substitute)
  • 1 tsp garlic powder
  • 1 tsp Himalayan salt
  • 1 tsp extra virgin olive oil
  • Toppings of your choice

Directions:
Preheat oven to 400 degrees.  Prepare pizza pan or cookie sheet with non-stick spray or olive oil.
Cut off florets of cauliflower in to medium sized chunks and discard the large stems and leaves.  Place in food processor and pulse a second at a time until cauliflower resembles rice (careful to not puree by over-processing).  Place the diced cauliflower in a microwave safe bowl and microwave on high for 8 minutes.
Meanwhile, get to preparing any toppings that require cooking.  You will want to make sure all toppings are cooked beforehand.
When cauliflower is done cooking in the microwave, let it cool a bit before adding the rest of the ingredients (we don’t want to scramble our beaten egg!).   Add 2 1/2 cups shredded cheese, the beaten egg, Italian seasoning, garlic powder, salt and olive oil to the cauliflower and mix well.
Pour out on to the pizza pan and spread out in to a 3/4″ thick circle with a spoon and/or rolling pin.  Clean edges up by patting towards inside of the pie to avoid any thinner spots that may overcook.  Place in 400 degree oven and bake 25 minutes, or until crust is golden brown.
Once finished, allow to cool for a few minutes before adding toppings – this will help it firm up a bit.  When you’re ready, place back in the oven for 5 minutes or until cheese is melted.
Enjoy with your favorite toppings!!!  
P.s. I Recommend using lots of veggies to keep it healthy!!

Clean Chocolate Peanut Butter pudding surprise!

Clean Chocolate Peanut Butter pudding surprise
Ingredients:
1 4 oz container of plain Greek yogurt
1/2 scoop chocolate shakeology
1 tsp natural peanut butter
1 tsp chocolate chips (optional)
Directions:
Mix first 3 ingredients together
Top off with chocolate chips
Enjoy!
This was a surprise my mom gave me instead of birthday cake when I told her I wanted to be healthy. .It was totally amazing and satisfied my cravings!

So I'm so excited to start another coach apprenticeship December 2nd! I run these trainings every month because so many people love health and fitness and would love to make a career out of their passion, but do not know where to start.  This is where I come in! As a 6 star Qualifying Elite Beach Body coach (top 1% of over 150,000 coaches in the company) and part of the #2 team, I have the training to help you get to the top! I am looking for 5 people to join my team who are serious about coaching!
You may be asking, what is Beach Body??

What I do as a coach to help my customers meet their health and fitness goals is run challenge groups.  The challenger picks a workout program of their choice and drinks Shakeology once daily to maximize their results. I make a closed group on facebook so I can work 1:1 with them to motivate them and keep them accountable.  I call it a big support group! Watch this video on what a Challenge Group is:

Part of me running the Apprenticeship is teaching you how to run a group, along with how to build a team of your own! Every day, you will have small assignments to help you feel comfortable as a coach and to start growing as a person, coach, and a leader!
What is awesome about working for this company is you do not have to be a personal trainer, doctor, rocket scientist, or even at your goal weight, although you can be any of these if you would like ;)... I started as a challenger in my own journey that just wanted to help motivate others. I am a nurse with 2 small boys and wanted to find a job that gave me the opportunity to work from home. I already was learning to eat healthy, I was using the workouts and shakes, so I decided to ask people to join my journey with me! Guess what!? Within 1 yr, I am now making what I do as a nurse full time with a 4 yr BSN in nursing!
I am here to show you its possible! I never thought in a million years I would even make up to work part time, BUT since I love working out and keeping myself and family healthy, I shared what I knew and people were inspired!

Coconut Crusted Sweet Potato Truffles- Clean version

Coconut Sweet PotatoTruffles

INGREDIENTS: (12 servings)
  • 2 large sweet potatoes, scrubbed
  • 1 oz finely shredded unsweetened coconut
  • 1/4 cup raw, unsalted pecans
  • 1/4 cup pure maple syrup
  • 1 tsp pure vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 6 tbsp coconut flour
INSTRUCTIONS:
  1. Preheat oven to 425°F. On a foil-lined rimmed baking sheet, add potatoes. Bake, turning once, for 50 minutes, until fork-tender. Remove from oven and let sit until cool enough to handle.
  2. Halve potatoes and scoop out flesh, discarding skins. Transfer flesh to a medium bowl and mash with a potato masher.
  3. In a food processor, process pecans into fine crumbs. Add 1 cup mashed potato flesh (reserve remaining potato for another use) and maple syrup. Process until smooth, stopping to scrape down sides of bowl. Add vanilla, cinnamon, nutmeg and process to combine. Gradually add flour and pulse to fully combine.
  4. Scoop out potato mixture in 1-tbsp increments and roll into balls. Transfer to coconut and roll to coat. Arrange on a parchment-lined baking sheet 
  5. Bake for additional 20 min or until coconut has nice light brown color on top!
  6. ENJOY!!
