As I was finishing the Ultimate Reset Cleanse, I was craving some coconut for some reason! So I wanted to throw something together and came up with a healthy version of coconut shrimp!! Although it sounds healthy, when many people make it, it ends up being unhealthy with the additives they put on it... whether its butter, flour, and especially the sauce!! So I have this yummy recipe that is perfect for you family dinner, or even a dish for a party!
Ingredients:
1 LB Cooked shrimp, peeled
1/2 cup unsweetened shredded coconut
1/4 cup whole wheat panko crumbs
1 pinch Himalayan salt
1 TSBP Coconut Flour
1 egg
Non-stick pray ( I use EVOO spray)
Directions:
Mix together the unsweetened coconut, panko crumbs, and salt.
Place the Coconut flour in a separate dish
Whisk an egg in a small bowl
Dip the shrimp in the flour, shaking off the extra, then dip the shrimp into egg, then into coconut panko mixture.
Place on foil and put on grill for approx 10 min or until golden brown on top. Flip and cook for another 5 minutes or until golden brown on top.
I love cooking now with Coconut Flour as it gives food a great taste, but has so many more health benefits than white flour itself!

Prepping for Business Trip- Beachbody SUMMIT 2015 Nashville TN!
Ok, so I really love my job!! Who can say their job consists of working out, being healthy, motivating others, and traveling with friends and family?? I DO!!! Not always though.. As an ER nurse, I was working 12 hour shift... swing shifts, missing out on a lot of quality time with my boys because if I wasn't working, I was catching up on sleep because my schedule was so off.
Now, I don't have to worry about it! I make my own schedule, live life by design, and take every day as a blessing that God gave me!
So prep time for SUMMIT! This is our biggest training of the year with 25,000 coaches attending this year! Pretty amazing!! We hear from top coaches in the company, our amazing CEO of Beachbody, and lots of amazing success stories with both physical and financial freedom just because they gave Beachbody a chance and took that leap of faith!
Ok, so since I pretty much live in my workout clothes, this is MY time to live it up a little!! Dress up with my friends, go to parties, trainings, and I do get to go on stage in front of 25,000 coaches to be recognized 3 different times: For Elite (top 1% of the company), Success Club Legend (changing lives and helping people along their fitness journey), and for being a 9 star coach (have an amazing team that joined me on this amazing journey)!
Then on top of all that, I get to present on Thursday!! WHAT?!?!?! OMG Yes, ME! Kinda freakin out over here! On a good note, I am talking about what I've done myself to get to where I am today as a successful Beachbody coach! So... lets get it done! Time to prep! Mentally and physically! LOL
Nothing like a good Mani and Pedi to relax and allow yourself to get pampered! I don't do this often trust me! I usually do it on my own, if at all!! Very low maintenance and like to do everything myself.. my own nails and box color on my hair.... BUT.. Time for another change!
THE HAIR!
Yup, I did it!! So I've always had long hair until last year when I cut it to support a very good friend of mine who was fighting Cancer.. which she won by the way! Doing this actually made me realize how UNIMPORTANT hair is!! Who cares if its long and wavy and full of beautiful curls! Short hair or no hair is just as awesome! It does NOT define WHO YOU ARE!!
I've wanted to do this for a while, but afraid of what I'll look like.. then worried what people will think... Then the color.. YES, its purple highlights! Again.. afraid to do it because of what people will think...
Then I thought to myself... what do I always tell people.. WHO CARES what others think! If they are your true friend or care about you, they will accept you for who you are and love YOU for YOU!
If someone wants to talk about "I look unprofessional", or 'I'm a mom, why would I do that to my hair?"... Well, heres something for you... I am NOT on drugs, an alcoholic, or on house arrest.. I provide for my kids and family DAILY and give them the best life possible! I don't think a hair color or cut will change my parenting or professionalism! If it does, good thing I work for a company who is ok with expressing who you are!! :)
Ok you can tell I've had things said to me haha!! Its ok, hates are everywhere, you will never please everyone, but all you can do is be unapologetic about who you are as a person and keep doing what YOU love and what makes YOU happy at the end of the day!!

Using a large blender, puree applesauce and banana until smooth.
Add eggs and blend for approximately 30 seconds.
Add remaining wet ingredients and mix.
Add dry ingredients and mix thoroughly.
Put mixture into a bowl and fold blueberries into batter mixture.
Add to muffin tin and bake for 17-20 minutes until golden brown.
ENJOY!
Ok... tip.. NEVER bake these while on the Ultimate Reset! So I'm not gonna lie, I am SOOOO glad this Ultimate Reset is OVER!! I am not meant to be vegan.. I want my chicken and eggs back!! But I am SOOO glad I did it! I did this 2 years ago and lost 11 pounds, but also did't have as much weight to lose.. After my Figure Competition, I had some major issues with my weight and retaining water and cramping constantly.
I went to the Ultimate reset because nothing else was helping me... Dr. Appt and the Doctor just saying, "your borderline obese"... "well your almost 30 and as you get older, you hold on to weight more..." UMMM or if you would have seen my 4 weeks ago I had an 8 pack and competed in a figure competition! GAH! So after getting told that and getting a prescription for Lasix (a diuretic for Congestive Heart Failure Patients and more), I decided to go on my own for help!
Thank goodness I listen to my own body and never picked up that prescription! As I took a leap of faith with the Ultimate Reset, it was EXACTLY what I needed to get back to my normal self.. Not competing weight and body, but my NORMAL weight and body!!
DAY 1 was difficult... SLEEPY, CRANKY, and UNSURE of what to expect!
Eggs, Kale and pin nuts, and 1 slice Ezekiel toast! YUMMO!!
I did pretty darn amazing my first week!! Food was amazing, since I could still have eggs and chicken and salmon! ;)
Oh, now I remember what I almost couldn't handle about this Reset--> the Alkalinize! Lol! Fortunately, I got used to it by the 2nd day! :) Not bad when you are eating for nutrients, not focused on the taste!
Week 2 Breakfast- never thought of mixing this together, but it was amazing! Oatmeal, Greek yogurt, fresh Blackberries and drizzle pure maple syrup on top!

Fruit plates, Pinto Beans and rice, Salads, and zucchini ..... Lots of food! trust me, you eat during this Program! NO starvation!!
This was by far my FAVORITE lunch! I will be definitely using this more!
Oh yea, hey Week 2, I have to drink this 3 times a day? Kinda looks like sewer water... thank goodness The Fiber Sweep tasted like lemon! Wasn't bad at all!
Now I have this quote here because I had slight issues.. I ended up totally binging one night.. I let my emotions get the best of me :( On another note, I didn't gain everything back! I did gain 5 lbs but lost it quickly I was very bloated... I am telling you this because I have to be real and honest or Im not being honest with myself... No one said this was going to be easy, but if you fall off, DONT QUIT.. Get right back on track and continue moving forward!! I wanted to give up so many times, but I knew I wanted to get back to my happy place... feeling confident again. As a fitness coach, we do focus on our image.. its our career so we must be the best version of ourselves as possible!
OK I did have this fresh fruit plate for week 2 and 3... EVERY DAY!! Im kinda over fruit for now! Not going to lie!!
Love my Salads! So I always did cucumber and tomato and some days I added Avocado and Pumpkin Seeds! Of course with the Home made Greek Dressing!
Snack- Fresh Veggies n Hummus!
My dinner for the last 7 days of my Reset- Not bad but I need a change!
Im pretty proud of myself, the last week I came back strong! ok I did cheat and have a piece of chicken... and Shakeology.. Seriously, Im not meant to be Vegan I swear!! LOL!! But, on a good note, they were healthy cheats!! Now I know I wont gain the weight right back because I ate foods I normally eat! Ok.. so Day 21....
RESULTS ARE IN: Starting Measurements: Weight Starting: 158.5 Arm R- 12 Arm L- 12 Chest- 36 Waist- 31 1/2 Belly Button (largest part of belly)- 33 Hips- 39.5 Thigh R- 22 Thigh L- 22 Ending Measurements: Weight Ending: 139.4 Arm R- 11 1/2 Arm L- 11 /2 Chest- 35 Waist- 29 Belly Button- 31 Hips- 38.5 Thigh R- 21 1/2 Thigh L- 21 1/2 TOTAL LOSS OF: 19 LBS -11 1/2 Inches YAY for my bloating being gone, my cramping in my body is gone, and I am feeling ME again!!!! Again... so glad I did this!! Its not always about needing medication.. sometimes its just a little trial and error with more natural things to get yourself back on track!! :) Now I am leaving this week for our SUMMIT training with Beachbody (our biggest training of the year), and I am prepping and packing HEALTHY!! There is NO reason why I cannot continue this and maintain what I have going! I will definitely be incorporating a lot of the meals from the Ultimate Reset, but also back with my chicken, Greek yogurt, eggs, and STEAK!! Gotta love my Steak once a week!! :)
Meal prep and meal plan is DUNZO!! Now time to maintain that healthy lifestyle!

Combine the first 3 ingredients in a gallon-size ziploc bag, shake it up, and then add the salmon.
Allow to marinate in the refrigerator for an hour, turning after half an hour.
Pour the salmon and the marinade onto foil and broil on high in oven with door slightly opened for 15 minutes. The salmon is done when it flakes easily at the thickest part.
Enjoy with a favorite side! I love eating this with some Baked Zucchini!

So I am not sure if I should even be posting... GAHH please tell me WHY I decided to do the Ultimate Reset during a holiday... I mean really.. 4th of July?? LOL.. So last week Im coming clean.. A total of 2 ok 3 cheat meals! Now, they are considered cheats because this reset is vegan.. Yea, I totally ate a lean burger... I am NOT meant to be Vegan! I want my chicken and my Shakeology back.. like NOW!! So after my 3 cheats, I have had no gain and no loss.. thats a good thing for me because its good to know when I go back to normal food, all the weight will not come right on.

During the days I had cheats, I did do workouts.. I miss those too :( I have done Insanity Max 30, 21 Day Fix Extreme, and the upcoming release CIZE! Oh how I miss getting a good sweat on!
So yea, in a way I feel like a failure, but I also think doing it during a holiday was a BAD idea!! Especially since grilling is my favorite and I grill meat, not Tofu lol!

OK, so today starts my LAST week on this Reset...I am not going to lie, Im pretty excited for it to be over. The absolute hardest part for me is not eating meat or having my regular Chocolate SHAKEOLOGY. Like I don't even want the bad food.. I just want my normal food back!
Do I regret doing this??
Absolutely NOT!! I came into this with an extra 15-20 pounds of weight that I gained over a 4 week period out of no where.. Retaining water, having blood work and no answers. Join pain and just feeling terrible.
Since being in my second week, I have lost 15 of those extra pounds and my joint pain is GONE.. literally, gone at this point. Will it come back when I start working out? Maybe.. but what I got was the ability to rest my body from the workouts and try to get myself back to some kind of normalcy. As I get back into my workouts and into a normal routine, I will be very cautious of what I eat and how I workout because I want to maintain what I have gotten out of the Reset to help me with my issues.
GOAL for this week: 5 more pounds gone for good and just continue feeling better!! My sleep schedule to continue how it is because it is much better than what it has been! Finally, a good sleep without waking up 5 times!
I got my meals prepped and ready to rock!! Sweet potatoes, veggie stir-fry, Fruit salads, apples and blueberries, and salads!! Simple and sweet!!
