Roasted Asparagus and Ham Wrap

I know the holidays get tough and we try to find a healthy way to stay on track, but also cook so the family is not starving right?! Many people love ham, but fall short of the veggie part!! 
Have you ever thought of putting them together so its a WIN-WIN for everyone!?! 

ROASTED ASPARAGUS AND HAM WRAP

Ingredients:
1 lb. thick asparagus spears
1 lb. smoked lean ham (I get the low sodium and slice thin)

Directions:
Preheat oven to 400F. Spray a baking sheet with non-stick spray (EVOO spray or PAM)

Trim the wood ends of asparagus spears, making all pieces the same size. Roll a piece of ham around each piece of asparagus, securing with a toothpick inserted horizontally so the piece of asparagus will lay flat on the baking sheet. Lay asparagus on the sprayed baking sheet and spread out so they are not touching. 

Roast asparagus for 10 minutes on the first side, or until the ham is lightly browned. Turn asparagus pieces over and roast 6 minutes more on the second side, until asparagus is barely tender-crisp and ham is lightly browned on both sides.

Enjoy and serve as an appetizer or side dish with your dinner!
